Last night I made my first ever Homemade Chicken Pot Pie and it was AMAZING!! I was soo nervous about how it would turn out but it was great! I had a bunch of people request the recipe so I thought I would share! I did make a couple minor modifications to the recipe but besides that it was by the book!
Here are some tips for the recipe that I suggest!
- Use an iron skillet for the filling! You can put the crust over the top and put it in the oven when you’re ready!
- I added more thyme 🙂 I love Thyme!
- Follow the crust recipe! The vinegar and egg made this perfectly fluffy and light for the heaviness of the filling.
- Make the pie crust ahead of time to save on time.
- Chop all of the veggies ahead of time to save on time.
- Buy a Rotisserie Chicken and Chicken Stock rather than making one from scratch. Much simpler and adds flavor.
- Make sure you have a pastry cutter to cut in the butter into the pie crust. Essential.
