Nilgai Tacos

An exotic game twist on a Hispanic classic dish… What is a Nilgai anyway? Well I am so glad that you asked! Nilgai is an Asian antelope that was brought to North America and released on the King Ranch in South Texas as an exotic invasive species. Ryder decided that he wanted to go on a nilgai hunt for his bachelor trip, so now we have a ton of meat and I am dreaming up every way possible to eat it! Thus, Nilgai tacos were born!

  • Olive Oil
  • 1 pound of Nilgai Ground Meat
  • 1 White Onion
  • 1 TBSP of Minced Garlic
  • Cumin 
  • Chili Lime Seasoning
  • Garlic Powder
  • Paprika
  • Corn or Flour Tortillas (Your Preference)

Toppings: 

  • Avocado
  • Limes
  • Sour Cream
  • Cilantro
  • Mexican Blend Cheese

 

Start by heating up 1-2 tablespoons of Olive Oil in a non-stick skillet over medium- high heat. (About 1 minute) Once the oil is hot, add your onion and the minced garlic. Cook until your
onion is starting to become clear. (About 3-4 minutes)

While your onion and garlic is cooking, blot any excess blood and juices from your thawed Nilgai meat. This will help with the gamey flavor of the taco meat. Once the onion and garlic have cooked a little, add the Nilgai meat and season to your liking with the Cumin, Garlic Powder, Chili Lime Seasoning and Paprika. 

Let the meat cook until browned through. 

When the meat is almost done, start warming your tortillas and set to the side in a tortilla warmer. Be careful not to burn them and be sure to flip them so they are cooked on each side. 

When you’re ready to plate the tacos, build your tacos however you’d like! I prefer mine with all of the fixings. Ryder always tops them with hot sauce as well. 

**For a spicier flavor, you can add cayenne pepper seasoning to the meat or red pepper flakes.
