Today I wanted to share a great recipe that I came across while looking for things to eat on the Keto diet! I used to post all kinds of fun recipes that I would make so I thought I would start sharing those again.
This year just like everyone else, I am trying to get healthier! I even have a weight loss goal that I broke out into 3 month increments to try to make it easier to achieve. With losing weight there also is the eating part. Someone once told me that the food you eat impacts your body’s shape more that the weights do. I’m not 100% sure if that is completely true, but what I do know is when I eat potatoes my body starts to look like one.
This recipe has a fun twist on a normal salad. Instead of feeling like a rabbit while eating the salad, you actually feel like you are having a full meal!
Roasted Veggie Salad
- 1 Cup Sliced Cherry Tomatoes
- 1 Cup of Shredded Carrots
- 1 Cup Chopped Bell Pepper
- 1 Cup of Chopped Red Onion
- 1 Cup
Asparagus - 1 TSP of Salt & Pepper
- 2 TSP of Chili Powder
- 1 TSP of Oregano
- 1 Pound of Shrimp
- Juice of one lime
Dressing:
- 3 TBSP Lime Juice
- 2 TBSP Olive Oil
- 1 TBSP Honey
- 1/2 TSP Chili Powder
- S&P to taste
Heat oven to 400 degrees Farenheit
Start by arranging the vegetables on a baking sheet. Then drizzle olive oil over the vegetables, and season with S&P, 1 TSP of Chili Powder, and Oregano. Place in the oven for 10 minutes.
After 10 Minutes, remove from the oven and add the peeled shrimp to the sheet. Then drizzle more olive oil over the shrimp and season with 1 tsp chili powder and the juice of one lime. Then pop back in the oven at 400 degrees for 8-10 more minutes, until shrimp is cooked.
To make the dressing, combine all ingredients in a jar, then shake to mix them together. (You can use other containers if you don’t have a jar)
Serve over a bowl of mixed greens and add dressing to taste!
